Description
A comforting dish of golden baked chicken thighs with sweet, rich caramelized onions.
Ingredients
Scale:
4 pieces Bone-in, skin-on chicken thighs
2 tablespoons Olive oil
1 teaspoon Salt
1/2 teaspoon Black pepper
1 teaspoon Garlic powder
2 medium Onions, thinly sliced
1 tablespoon Fresh thyme leaves
1/2 cup Chicken broth
Instructions
Preheat your oven to 425°F (220°C). This high temperature is key to getting that golden skin.
In a large bowl, combine olive oil, salt, black pepper, and garlic powder. Add the chicken thighs and coat them thoroughly with the mixture.
In a large oven-safe skillet or a baking dish, arrange the chicken thighs skin-side up. This will allow the skin to crisp beautifully.
Add the sliced onions around the chicken in the skillet.
Sprinkle with fresh thyme leaves for an aromatic touch.
Pour the chicken broth into the pan, ensuring it does not cover the chicken skin. This will help keep the chicken moist while allowing the skin to crisp.
Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown.
Let the chicken rest for 5 minutes before serving. This helps the juices redistribute for maximum tenderness.
