  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs with salt and pepper on both sides.
  3. In a medium saucepan over medium heat, combine soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger. Stir frequently until the mixture begins to simmer.
  4. Add the cornstarch-water mixture to the saucepan and stir until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.
  5. Place the seasoned chicken thighs in a baking dish. Pour half of the teriyaki sauce over the chicken.
  6. Bake the chicken in the preheated oven for about 25-30 minutes, until cooked through (internal temperature of 165°F or 74°C).
  7. Brush the remaining teriyaki sauce over the chicken during the last 5 minutes of baking.
  8. Once done, remove the chicken from the oven and let it rest for a few minutes before serving.
