This Easy Chicken Caprese Skillet is a delightful fusion of flavors that brings the classic Italian caprese salad into a warm, hearty dinner. Perfect for busy weeknights, this one-pan dish combines tender chicken, fresh mozzarella, juicy tomatoes, and fragrant basil, all drizzled with a luscious balsamic glaze.

4 boneless, skinless chicken breasts (about 1.5 lbs), trimmed and pounded to an even thickness
Salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 tablespoons olive oil, preferably extra virgin
2 cups cherry tomatoes, halved
8 oz fresh mozzarella cheese, cubed or sliced
1/4 cup fresh basil leaves, roughly chopped
1/4 cup balsamic glaze (store-bought or homemade)
Instructions
Pat the chicken breasts dry with paper towels and season both sides generously with salt, pepper, garlic powder, and Italian seasoning.
In a large skillet, heat the olive oil over medium-high heat until shimmering.
Add the seasoned chicken breasts to the skillet and cook for 6-7 minutes on one side until golden brown. Flip and cook for an additional 6-7 minutes, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and set aside to rest.
In the same skillet, add the halved cherry tomatoes. Sauté for 3-4 minutes until they soften and begin to burst.
Return the chicken to the skillet and top with the mozzarella cheese. Cover and cook for an additional 3-4 minutes, or until the cheese is melted and bubbly.
Remove the skillet from the heat. Stir in the chopped basil and drizzle with balsamic glaze before serving.
