Description
A creamy, cheesy sauce enveloping tender chicken, vibrant broccoli, and fluffy rice, all simmered together in a slow cooker until every flavor melds into a cozy embrace.
Ingredients
Scale:
2 pounds Boneless, skinless chicken breasts
4 cups Broccoli florets
1 cup Long-grain white rice
2 cups Chicken broth
1 can (10.5 oz) Cream of chicken soup
2 cups Cheddar cheese, shredded
1 teaspoon Garlic powder
1 teaspoon Onion powder
1 teaspoon Salt
½ teaspoon Black pepper
2 tablespoons Olive oil
Instructions
In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then sear them for 3-4 minutes on each side until golden brown. This step enhances the flavor.
Transfer the seared chicken to the slow cooker. Add the broccoli, rice, garlic powder, onion powder, and chicken broth. Mix well to combine.
Pour the cream of chicken soup over the mixture, spreading it evenly. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
About 30 minutes before serving, add the shredded cheddar cheese on top. Cover and let it melt into a delicious, gooey layer.
Once done, shred the chicken with two forks right in the slow cooker, mixing it with the rice and broccoli. Serve hot and enjoy your comforting meal!
