A delightful combination of creamy avocados and sweet, succulent corn that bursts with flavor in every bite. Perfect as a dip for chips, a topping for tacos, or simply enjoyed on its own.
Ingredients
Scale:
2 ripe avocados, diced, preferably Hass
1 cup fresh corn kernels (about 2 ears of corn, or use canned or frozen if preferred)
1 medium red onion, finely chopped
1 medium tomato, diced
1 jalapeño, seeded and minced (optional)
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Salt and pepper to taste
Instructions
Prepare the Corn: If using fresh corn, remove the kernels from the cobs using a sharp knife. Grill or boil the corn briefly for enhanced flavor, or use frozen corn after thawing and draining.
Chop the Vegetables: Dice the avocados, tomato, and red onion finely. Seed the jalapeño for a milder salsa.
Combine All Ingredients: In a large mixing bowl, combine the diced avocados, corn, red onion, tomato, jalapeño, and cilantro gently.
Add Lime Juice: Squeeze the juice of one lime over the mixture.
Season: Sprinkle salt and pepper to taste and mix gently.
Chill (Optional): Let the salsa sit in the refrigerator for about 30 minutes before serving.
