- 2 cups Zucchini, grated
- 1 ½ cups All-purpose flour
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- 2 large Eggs
- ⅓ cup Olive oil
- ⅓ cup Milk
- 1 cup Shredded cheese (cheddar, mozzarella, or your choice)
- ¼ cup Fresh herbs (such as basil or parsley), chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
- In a large bowl, combine the flour, baking powder, baking soda, and salt. Whisk together until well mixed.
- In another bowl, beat the eggs, then stir in the olive oil and milk until well combined.
- Add the grated zucchini to the wet ingredients, mixing well.
- Pour the wet ingredients into the dry ingredients, folding gently until just combined. Be careful not to overmix.
- Fold in the shredded cheese and herbs until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
