2 cups cooked chicken, shredded (about 2 medium chicken breasts)
4 cups mixed greens (such as spinach, kale, or romaine)
1 cup shredded carrots
1 cup red bell pepper, thinly sliced
½ cup cucumber, sliced
¼ cup green onions, chopped
½ cup chopped cilantro (optional)
1 cup chopped peanuts or cashews (for topping)
¼ cup peanut butter (natural, unsweetened is best)
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon honey or maple syrup
2 tablespoons rice vinegar
1 tablespoon sesame oil
1-2 tablespoons water (to thin the dressing)
1 clove garlic, minced (optional)
1 teaspoon grated fresh ginger (optional)
Instructions
Prepare the Chicken: If you don't have cooked chicken on hand, poach or grill your chicken breasts until fully cooked (165°F internal temperature), about 15-20 minutes. Let it cool before shredding.
Make the Dressing: In a bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, and minced garlic and ginger (if using). Add water gradually until your desired consistency is reached.
Assemble the Salad: In a large bowl, combine the mixed greens, shredded chicken, carrots, bell pepper, cucumber, green onions, and cilantro. Toss gently to combine.
Dress the Salad: Drizzle the peanut dressing over the salad. Start with half and add more to taste, tossing to coat everything evenly.
