Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add chopped mushrooms and spinach to the skillet, cooking for about 3-4 minutes until the vegetables are tender. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the sautéed vegetables with Parmesan cheese and chopped herbs. Season with salt and pepper.
  5. Using a sharp knife, slice the pork tenderloin lengthwise, being careful not to cut all the way through. Open it like a book.
  6. Spread the filling evenly over the pork, then roll the tenderloin back up and secure it with kitchen twine or toothpicks.
  7. Rub the remaining olive oil over the outside of the tenderloin and season with additional salt and pepper.
  8. In a hot skillet, sear the st■ tenderloin on all sides for about 2-3 minutes per side until golden brown.
  9. Transfer the seared tenderloin to a baking dish and bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  10. Remove from the oven and let rest for 10 minutes before slicing. This allows the juices to redistribute throughout the meat.
