2 tablespoons olive oil
12 ounces Andouille sausage, sliced
1 medium onion, diced
2 medium carrots, diced
2 stalks celery, diced
4 cloves garlic, minced
6 cups vegetable broth
1 ½ cups dried lentils (green or brown)
1 bay leaf
1 teaspoon dried thyme
1 teaspoon smoked paprika
½ teaspoon cayenne pepper (optional)
Salt and black pepper to taste
¼ cup fresh parsley, chopped (for garnish)
Instructions
In a large pot, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Stir occasionally to ensure even cooking.
Add the diced onion, carrots, and celery to the pot. Sauté for 5 minutes, or until the vegetables are softened.
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to let it burn.
Pour in the vegetable broth and bring the mixture to a boil.
Add the lentils, bay leaf, thyme, smoked paprika, and cayenne pepper (if using). Stir to combine and reduce the heat to a simmer.
