1 pound Ground chicken
1/2 cup Canned pumpkin puree
1/2 cup Breadcrumbs (or gluten-free breadcrumbs)
1 large Egg
2 cloves Garlic, minced
1/4 cup Onion, finely chopped
1 teaspoon Ground cumin
1 teaspoon Salt
1/2 teaspoon Black pepper
1 teaspoon Paprika
2 tablespoons Olive oil (for greasing)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the ground chicken, pumpkin puree, breadcrumbs, egg, minced garlic, chopped onion, cumin, salt, black pepper, and paprika. Mix well until all ingredients are fully incorporated.
Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them evenly spaced on the prepared baking sheet.
Lightly brush the tops of the meatballs with olive oil to help them brown in the oven.
