Ingredients
Scale:
2 cups All-purpose flour
1 cup Granulated sugar
1 teaspoon Baking soda
1 teaspoon Baking powder
1 teaspoon Ground cinnamon
1/2 teaspoon Ground nutmeg
1/2 teaspoon Salt
1 cup Pumpkin puree
1/2 cup Vegetable oil
2 large Eggs
1 teaspoon Vanilla extract
1/2 cup Chopped walnuts or chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
In a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt until well combined.
In a separate bowl, mix the wet ingredients: pumpkin puree, vegetable oil, eggs, and vanilla extract. Stir until smooth.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to overmix. If desired, fold in walnuts or chocolate chips.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
