1 cup homemade pancake mix
1 cup milk
1 large egg
1 tablespoon melted butter
2 ripe peaches, pitted and sliced
2 tablespoons brown sugar
1 tablespoon butter
1 teaspoon cinnamon
4 oz pancetta, diced
Instructions
In a mixing bowl, combine the homemade pancake mix, milk, egg, and melted butter. Whisk until just combined; some lumps are okay.
Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup of the batter onto the skillet, forming a round pancake. Cook for about 2-3 minutes, or until bubbles form on the surface. Flip and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter, keeping the pancakes warm.
In a separate skillet, melt 1 tablespoon of butter over medium heat. Add the sliced peaches, brown sugar, and cinnamon. Cook, stirring occasionally, for about 5-7 minutes, or until the peaches are soft and caramelized. Remove from heat.
In the same skillet, add the diced pancetta and cook over medium heat until crispy, about 5-6 minutes. Drain excess fat.
