2 large chicken breasts (about 1 pound)
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 fresh jalapeños, diced (seeds removed for less heat)
3 cloves garlic, minced
8 ounces cream cheese
1 cup chicken broth
1 cup shredded cheddar cheese
Chopped cilantro (optional, for garnish)
Instructions
Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Sear the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add diced jalapeños and minced garlic. Sauté for 2-3 minutes until fragrant and the jalapeños begin to soften.
Reduce the heat to low and add the cream cheese. Stir until melted and combined with the jalapeños.
Pour in the chicken broth, stirring until the mixture is smooth and creamy. Let it simmer for about 5 minutes.
Return the chicken to the skillet, coating it with the creamy jalapeño sauce. Sprinkle shredded cheddar cheese evenly over the chicken.
Cover the skillet and let it cook for an additional 5 minutes, or until the cheese is melted and bubbly. Garnish with chopped cilantro, if desired.
