These No-Bake Cookies and Cream Cheesecake Bars are creamy and sweet with a crunchy chocolate cookie crust and bits of Oreo cookies.

- 24 chocolate sandwich cookies (like Oreos)
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/4 cup additional crushed Oreos for topping
Instructions
- In a food processor, pulse the chocolate sandwich cookies until they resemble fine crumbs.
- In a mixing bowl, combine the cookie crumbs with the melted butter and mix until the crumbs are evenly coated.
- Press the crumb mixture firmly into the bottom of an 8x8-inch baking dish to form the crust. Chill in the refrigerator for about 10 minutes.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.
- Fold in the crushed Oreos, reserving a few pieces for topping.
- Spread the cheesecake mixture evenly over the chilled crust, smoothing the top with a spatula.
- Sprinkle the reserved crushed Oreos on top for garnish. Cover and refrigerate for at least 4 hours, or until firm.
- Once set, cut into bars and serve chilled. Enjoy your creamy dessert!
