1 cup Rolled oats
1/4 cup Granulated sugar
2 teaspoons Baking powder
1/2 teaspoon Baking soda

1/2 cup Cold unsalted butter (1 stick)
3/4 cup Pecans, chopped
1/3 cup Maple syrup
1/2 cup Milk (or buttermilk)
1 teaspoon Vanilla extract
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour, oats, sugar, baking powder, baking soda, and salt. Whisk together to ensure they are evenly mixed.
Cut the cold butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
Stir in the chopped pecans, ensuring they are evenly distributed throughout the mixture.
In a separate bowl, mix the maple syrup, milk, and vanilla extract. Pour this wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix.
