4 pieces Boneless, skinless chicken breasts
8 oz Cream cheese, softened
2-3 Fresh jalapenos, diced (adjust for heat preference)
1 cup Shredded cheddar cheese
1 tsp Garlic powder
1 tsp Onion powder
1/2 tsp Salt
1/4 tsp Pepper
1/2 cup Breadcrumbs (for topping)
1 tbsp Olive oil
Instructions
Preheat your oven to 375°F (190°C). This ensures that your chicken cooks evenly and thoroughly.
In a mixing bowl, combine the softened cream cheese, diced jalapenos, garlic powder, onion powder, salt, and pepper. Mix until well blended.
Take the chicken breasts and carefully slice into the side of each breast to create a pocket for the filling. Do not cut all the way through.
Stuff each chicken breast with the cream cheese mixture. Be generous, but ensure that the filling doesn’t spill out.
In a small bowl, mix the breadcrumbs with olive oil until the breadcrumbs are nicely coated. This will help them brown in the oven.
Place the st■ chicken breasts in a greased baking dish. Sprinkle the shredded cheddar cheese on top of each breast, followed by the olive oil-coated breadcrumbs.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). The top should be golden brown.
Let the chicken rest for a few minutes before serving. This allows the juices to redistribute and keeps the chicken moist.
