Description
A cozy dessert that combines the rich flavors of autumn with a healthy twist, packed with protein.
Ingredients
Scale:
- 2 cups canned pumpkin puree
- 2 cups cottage cheese (low-fat)
- 3 large eggs
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/4 teaspoon salt
- Optional toppings (e.g., chopped nuts, whipped cream)
Instructions
- Preheat your oven to 350°F (175°C). This ensures the pumpkin bake cooks evenly.
- In a large mixing bowl, combine the canned pumpkin puree, cottage cheese, and eggs. Mix until smooth and creamy.
- Add the honey (or maple syrup), vanilla extract, baking powder, cinnamon, nutmeg, ginger, and salt. Stir until all ingredients are well incorporated.
- Pour the mixture into a greased 9x13 inch baking dish. Use a spatula to spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is firm to the touch.
- Remove from the oven and let it cool for a few minutes before serving. This allows the flavors to meld beautifully.
