1 pound ground beef
4 cups potatoes, peeled and sliced
1 can (10.5 oz) cream of mushroom soup
1 medium onion, diced
2 cups shredded cheese (cheddar or your choice)
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup milk
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, brown the ground beef over medium heat, breaking it apart with a spatula as it cooks, until fully cooked (about 5-7 minutes). Drain excess fat.
Add the diced onion to the skillet and sauté for another 3-4 minutes until the onions are translucent.
Stir in the cream of mushroom soup, milk, salt, and pepper. Mix well until combined.
In a greased 9x13-inch baking dish, layer half of the sliced potatoes evenly across the bottom.
Pour half of the beef mixture over the potatoes, then sprinkle with one cup of shredded cheese.
Repeat the layers with the remaining potatoes, beef mixture, and cheese.
Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes.
After 45 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.
