1 pound ground chicken
1/2 cup feta cheese, crumbled
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
2 tablespoons fresh dill, chopped
1/2 cup breadcrumbs
1 egg
1 teaspoon lemon zest
1 teaspoon salt
1/2 teaspoon pepper
1 cup Greek yogurt (for tzatziki sauce)
1/2 cup cucumber, grated and drained (for tzatziki sauce)
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the ground chicken, crumbled feta cheese, minced garlic, chopped parsley and dill, breadcrumbs, egg, lemon zest, salt, and pepper. Mix until just combined; avoid overmixing as it can lead to tough meatballs.
Using your hands, form the mixture into meatballs, about 1-1.5 inches in diameter, and place them on the prepared baking sheet.
Bake the meatballs for 20-25 minutes or until they are golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
While the meatballs are baking, prepare the tzatziki sauce by mixing the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt in a bowl. Adjust the salt to taste.
Once the meatballs are done, let them cool for a few minutes before serving with the tzatziki sauce on the side.
