A hearty dish that combines tender, flavorful ravioli with a savory broth, fresh vegetables, and aromatic herbs, creating a delicious meal that not only fills your belly but also nourishes your spirit.
Ingredients
Scale:
2 tablespoons olive oil
3 cloves garlic, minced
2 medium carrots, diced
2 stalks celery, diced
6 cups vegetable broth
9 ounces ravioli (fresh or frozen)
2 cups spinach, chopped
1 teaspoon Italian seasoning
Salt and pepper to taste
Grated Parmesan cheese (optional for serving)
Instructions
Heat the olive oil in a large pot over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it brown.
Add the diced carrots and celery to the pot. Cook for about 5 minutes until the vegetables begin to soften, stirring occasionally.
Pour in the vegetable broth and bring to a boil. Reduce the heat to a simmer.
Add the ravioli to the pot and cook according to package instructions, usually about 3-5 minutes for fresh ravioli and 5-7 minutes for frozen.
Once the ravioli are cooked, stir in the chopped spinach and Italian seasoning. Allow the soup to simmer for another 2-3 minutes until the spinach is wilted.
Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese if desired.
