Description
A lively twist on the classic Caprese salad, combining creamy mozzarella with juicy seasonal fruits and fragrant basil.
Ingredients
Scale:
- 2 cups of mixed seasonal fruits (such as strawberries, peaches, and blueberries)
- 8 ounces of fresh mozzarella balls (bocconcini or ciliegine)
- 1 cup of fresh basil leaves
- Salt and pepper to taste
- 1 cup of balsamic vinegar
- 1 tablespoon of honey (optional)
Instructions
- In a small saucepan, combine the balsamic vinegar and honey. Bring to a gentle boil over medium heat, stirring occasionally to prevent burning.
- Reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally, until the mixture thickens and coats the back of a spoon.
- While the glaze cools, rinse and slice your chosen seasonal fruits. Combine all the fruits in a large mixing bowl.
- Gently fold the fresh mozzarella balls into the bowl with the fruits, being careful not to crush the mozzarella.
- Tear the fresh basil leaves and add them to the salad mixture. Toss lightly to ensure the basil is evenly distributed.
- Lightly season the salad with salt and pepper. Toss everything together gently to combine.
- Transfer the salad to a serving dish and drizzle the cooled balsamic glaze over the top. Serve immediately.
