Ingredients
Scale:
- 2 cups strawberries, hulled and sliced
- 1 large cucumber, peeled and diced
- ½ cup red onion, thinly sliced (optional)
- ¼ cup olive oil, extra virgin
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or maple syrup
- Salt and freshly ground black pepper, to taste
- Fresh mint leaves, chopped (optional, for garnish)
Instructions
- Rinse the strawberries under cold water to remove any dirt or residues. Hull them and slice them into bite-sized pieces.
- Rinse the cucumber, peel if preferred, and dice it into uniform cubes.
- If using, slice the red onion thinly.
- In a large mixing bowl, combine the sliced strawberries, diced cucumber, and red onion. Toss gently.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, and pepper.
- Pour the dressing over the salad mixture. Toss gently to coat the salad evenly.
- For an extra refreshing experience, cover and refrigerate for about 30 minutes before serving.
- Just before serving, sprinkle chopped fresh mint over the salad.
