- 2 pounds Boneless, skinless chicken breasts
- 1.5 pounds Baby potatoes, halved
- 2 cups Fresh broccoli florets
- 2 cups Cheddar cheese, shredded
- 1 cup Chicken broth
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 tablespoons Olive oil
Instructions
- Prepare the chicken by trimming any excess fat and cutting it into bite-sized pieces for even cooking.
- In the slow cooker, add the halved baby potatoes as the base layer.
- Place the chicken pieces on top of the potatoes. Season with garlic powder, onion powder, salt, and black pepper.
- Pour the chicken broth over the chicken and potatoes, ensuring they are well-covered.
- Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
- About 30 minutes before serving, add the broccoli florets to the slow cooker.
- Once the cooking time is up, sprinkle the shredded cheddar cheese over the top. Cover and let it melt for about 5-10 minutes before serving.
