  2. In a large pot, add the potatoes and cover them with water. Bring to a boil over high heat, then reduce to medium and simmer for about 15-20 minutes, or until fork-tender. Drain and let them cool for a few minutes.
  3. On a baking sheet lined with parchment paper, place the boiled potatoes. Using a potato masher or the bottom of a glass, gently smash each potato until flattened, about ½ inch thick.
  4. Drizzle the smashed potatoes with olive oil, then sprinkle with garlic powder, salt, pepper, and grated Parmesan cheese. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy on the edges.
