Ingredients
Scale:
- 1 pound large sea scallops, patted dry
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh parsley, chopped finely
- 1 tablespoon fresh chives, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper, to taste
Instructions
- Start by patting the scallops dry with paper towels. Season both sides with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Allow the oil to get hot but not smoking.
- Carefully place the seasoned scallops in the skillet, searing for about 2-3 minutes on one side.
- Gently flip each scallop and cook for an additional 2-3 minutes until they are opaque and firm to the touch.
- In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté until fragrant.
- Stir in the lemon juice, chopped parsley, chives, smoked paprika, and cayenne pepper. Season with salt and pepper.
- Return the seared scallops to the skillet, tossing them gently in the butter sauce.
- Transfer the scallops to a serving platter, drizzling the remaining butter sauce on top. Serve hot.
