1 cup Granulated sugar
1 ½ teaspoons Baking powder
½ teaspoon Salt
½ cup Unsalted butter, softened
2 large Eggs
½ cup Milk
1 teaspoon Vanilla extract
½ cup Cookie dough filling (see notes)
2 cups Blue frosting (store-bought or homemade)
12 Mini chocolate chip cookies, for topping
Instructions
Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
In a large mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
In another bowl, cream the softened butter and sugar until light and fluffy, about 3-4 minutes. Use a hand mixer or stand mixer for best results.
Add the eggs one at a time, mixing well after each addition. Then add the milk and vanilla extract, mixing until combined.
Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Be careful not to overmix, as this can lead to dense cupcakes.
Fill each cupcake liner about two-thirds full with the batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, create a small hole in the center of each cupcake and fill with cookie dough filling. Use a piping bag or a small spoon to make the process easier.
Frost the cooled cupcakes generously with blue frosting. Top each one with a mini chocolate chip cookie for an extra touch.
