These delightful little bites combine rich chocolate with the satisfying crunch of crispy noodles and shredded coconut, making them an irresistible snack.

2 cups Semi-sweet chocolate chips
3 cups Crispy chow mein noodles
1 cup Shredded coconut (sweetened or unsweetened)
½ cup Peanut butter
1 teaspoon Vanilla extract
Instructions
Start by melting the semi-sweet chocolate chips. You can do this in a microwave-safe bowl, heating in 30-second intervals, stirring in between until smooth, or using a double boiler.
Once melted, remove the chocolate from heat and stir in the peanut butter and vanilla extract until fully combined and smooth.
In a large mixing bowl, combine the crispy chow mein noodles and shredded coconut. Pour the melted chocolate mixture over the noodle mixture and gently fold until all ingredients are well coated.
Using a spoon or a small cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet. Shape them into haystack forms if desired.
Refrigerate the cookies for at least 30 minutes to allow them to set. Once they are firm, they’re ready to enjoy!
