1 cup fresh corn kernels (about 2 ears of corn) or frozen corn, thawed

1/2 cup feta cheese, crumbled
1/4 cup red onion, thinly sliced
1/4 cup balsamic vinegar
1/4 cup olive oil
1 teaspoon Dijon mustard

Instructions
Preheat your grill to medium-high heat. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill the chicken for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing into strips.
While the chicken is resting, grill the corn for about 8-10 minutes, turning occasionally until charred and tender. Cut the kernels off the cob once cooked.
