2 cups water or broth for cooking quinoa
1 pound ground beef (or ground turkey for a leaner option)
1 can black beans, rinsed and drained (for a vegetarian burger bowl)
Salt and pepper to taste
1 cup cherry tomatoes, halved
1 cup diced cucumber
1 avocado, sliced
1 cup shredded lettuce or spinach
1/2 cup shredded cheese (cheddar or mozzarella)
Pickles, jalapeños, or any other favorite toppings
1/4 cup Greek yogurt or sour cream
2 tablespoons mayonnaise (optional)
1 tablespoon mustard

Instructions
Cook the Quinoa: Rinse 1 cup of quinoa in a fine-mesh strainer under cold water to remove the natural coating called saponin. In a medium saucepan, combine the rinsed quinoa and 2 cups of water or broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed. Fluff with a fork and set aside.
Prepare the Protein: In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned, about 7-10 minutes. Season with salt and pepper to taste. If using grilled chicken, heat until warm.
