A delightful treat for your taste buds with layers of moist cake, fresh strawberries, and homemade frosting, perfect for any occasion.
Ingredients
Scale:
1 ½ cups all-purpose flour
1 cup granulated sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk
1 cup finely chopped fresh strawberries (plus extra for garnish)
1 cup unsalted butter, softened (for frosting)
4 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract (for frosting)
½ cup pureed strawberries (fresh or frozen, thawed)
Instructions
Preheat your oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well. Stir in vanilla extract and buttermilk until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Gently fold in the finely chopped strawberries.
Divide the batter between the prepared pans and bake for 25-30 minutes.
Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Prepare the frosting by beating the softened butter until creamy. Gradually add the powdered sugar, then mix in heavy cream, vanilla extract, and pureed strawberries until smooth.
Once the cakes are cool, place one layer on a serving plate, frost the top, then add the second layer and frost the top and sides.
Garnish with fresh strawberry slices or whole strawberries.
