  1. Cook the Udon Noodles: Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions (usually about 3-4 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.
  2. Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, sugar, and crushed red pepper flakes (if using). Set aside.
  3. Heat the Wok: Place a large wok or skillet over medium-high heat and add 1 tablespoon of vegetable oil. Allow the oil to heat until shimmering.
  4. Cook the Beef: Add the sliced beef to the hot wok in a single layer. Cook for 2-3 minutes until browned, stirring occasionally. Remove the beef from the wok and set aside.
  5. Sauté the Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add garlic, ginger, and sliced bell peppers. Stir-fry for about 2 minutes until the peppers are slightly tender. Then, add the broccoli florets and cook for another 2-3 minutes.
  6. Combine Everything: Add the cooked beef back into the wok along with the udon noodles and sauce. Toss everything together gently to combine and heat through, about 2-3 minutes.
