A delicious, hearty meal that’s both satisfying and easy to whip up, bringing together tender beef, chewy udon noodles, and vibrant vegetables infused with rich umami flavors.

8 oz (225 g) udon noodles
1 lb (450 g) beef sirloin, sliced thinly against the grain
2 tbsp vegetable oil
1 cup bell peppers, sliced (red and green)
1 cup broccoli florets
2 cloves garlic, minced
1-inch piece ginger, grated
3 green onions, chopped (some reserved for garnish)
3 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp sesame oil
1 tsp sugar
1/2 tsp crushed red pepper flakes (optional)
Instructions
Cook the Udon Noodles: Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions (usually about 3-4 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.
Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, sugar, and crushed red pepper flakes (if using). Set aside.
Heat the Wok: Place a large wok or skillet over medium-high heat and add 1 tablespoon of vegetable oil. Allow the oil to heat until shimmering.
Cook the Beef: Add the sliced beef to the hot wok in a single layer. Cook for 2-3 minutes until browned, stirring occasionally. Remove the beef from the wok and set aside.
Sauté the Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add garlic, ginger, and sliced bell peppers. Stir-fry for about 2 minutes until the peppers are slightly tender. Then, add the broccoli florets and cook for another 2-3 minutes.
Combine Everything: Add the cooked beef back into the wok along with the udon noodles and sauce. Toss everything together gently to combine and heat through, about 2-3 minutes.
Garnish and Serve: Remove from heat and garnish with chopped green onions. Serve your Beef Udon Stir-Fry hot.
