1 ripe avocado, mashed
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard (optional)

1/4 cup red onion, finely chopped

1/4 cup celery, finely chopped (optional)
Instructions
Boil the eggs: Place the eggs in a medium saucepan and cover them with cold water. Bring to a boil, cover the pot, and remove from heat. Let sit for 10-12 minutes.
Cool the eggs: Transfer the eggs to a bowl of ice water for about 5 minutes to cool.
Peel the eggs: Gently tap each egg on a hard surface and peel under running water.
Prepare the avocado: Mash the avocado in a mixing bowl, add lemon juice and Dijon mustard, and mix well.
